Nestled in the heart of Disney Springs, Gideon’s Bakehouse has quickly become a must-visit destination for dessert lovers. Known for its massive, half-pound cookies and indulgent cakes, the dedicated fan base often waits in long lines for these unique treats.
For April, Gideon’s Bakehouse designed a new cookie that had never been sold at this bakery. We went to try it out.
April 2025’s Cookie of the Month: Carrot Cake Cookie
On March 31, Gideon’s Bakehouse posted “stories” on social media about the April 2025 cookie. This story stated that Gideon’s Bakehouse would be releasing a “never before seen cookie, and it’s awesome. Just saying.” We had our concerns since April 1 is April Fools’ Day. Nevertheless, the brand-new Carrot Cake Cookie can be found at Gideon’s Bakehouse for April.
The Gideon’s Bakehouse website says this about the new cookie, “Say hello to our Carrot Cake Cookie! This delightful baby is a delicious blend of flavorful and comforting spices, rich molasses, and finely incorporated carrots with a hint of tart. Completely covered with our crunchy house-made candied pecans and a drizzle of our handsome carrot cream cheese glaze. So much flavor in an ultra soft and buttery cookie complimented by a crunchy exterior!”
This cookie costs $6.50, which is common for the limited-time cookies at Gideon’s Bakehouse. The cookies on the everyday menu, like the Original Chocolate Chip, cost $6.
Review of the Carrot Cake Cookie at Gideon’s Bakehouse
In simple terms, we enjoyed it. The combination of the carrot cake cream cheese glaze with the unexpected white chocolate chips surprised us. Those chips added a unique balance to the carrot cake mixture.
However, later in the day, we spoke with the talented staff at Gideon’s Bakehouse. They told us those chips were actually cream cheese chips. We tried another carrot cake cookie after this initial review. We still tasted a mostly white chocolate flavor during that taste test, but we could see how the chips were cream cheese chips.
The flavor profile of these new cookies tends to be a bit sweeter than most Gideon’s Bakehouse cookies, which are richer instead of just being sweet.
This new creation shines with the soft interior expected of a Gideon’s Bakehouse cookie. Fans of candied pecans will love it. The touch of molasses from the minds behind this deserves praise.
Gideon’s Bakehouse sometimes offers a carrot cake slice. We have enjoyed that cake on several occasions. However, the Carrot Cake Cookie had a different taste than the cake offered at Gideon’s Bakehouse. If you like or dislike the cake, we do not feel that means you will react the same way when tasting the carrot cake cookie. Our group all had different reactions to this brand-new cookie compared to their memory of having the Gideon’s Bakehouse carrot cake.
Overall, we enjoyed this cookie. For fans of carrot cake or candied pecans, this could quickly become their top cookie at Disney Springs. However, this cookie might be messy for guests due to the carrot cake cream cheese glaze. Also, the texture varies from the usual chocolate chip creations from Gideon’s Bakehouse.
We visit Gideon’s Bakehouse at Disney Springs often. This might be one of the best limited-time monthly cookies from this bakery. However, guests must like carrot cake, or the quality of this cookie will be wasted on them.
April 2025 cakes and cold brews at Gideon’s Bakehouse
Each month, Gideon’s Bakehouse released limited-time cakes and cold brews for that month only, For April 2025, the options include:
- Pineapple Dream Cake – This returning cake consists of vanilla cake covered in pineapple buttercream, layered with house-made pineapple jam, pineapple caramel, and brown butter crumbs. Slices every Wednesday and Saturday.
- Coconut Cream Nitro Cold Brew – This is a brand-new cold brew for this month only. It consists of real coconut cream, so it tastes more like the smooth flavors of coconut bark than cheap syrups.
